Grilled pieces of Gluten-Free Flatout Flatbread steal the show. They work amazingly well, as we discovered in the Maple Tahini Grilled Sweet Potatoes, with the sauce we currently have.

Tahini Grilled Avocado with Cauliflower, Sweet Potato and Sweet Potato
Ingredients
- 2 Medium sweet potatoes (about 600 grams or 1 1/4 lbs)
- Salt
- 2 Large zucchinis
- 4 Cups Cauliflower, cut into large florets
- 6 1/2 tsp Extra virgin olive oil, divided
- Pepper
- 2 Small avocados
The chips:
- 1 Flatout Gluten Free Flatbread (or light)
- 1 tsp Extra virgin olive oil
- 1 tsp Lemon zest, packed (about 1 small lemon)
- 1/2 tsp Garlic salt
Dressing:
- 1/4 Cup Tahini
- 14 Cup Cilantro tightly packed and roughly chopped
- 2 Tbsp Roughly chop and tightly packed
- 2 Tbsp Jalapeno, roughly chopped (seeds removed - about 1 jalapeno)
- 2 Tbsp Water
- 4 tsp Agave
- 4 tsp Fresh lemon juice
- 1/4 tsp Salt
- Fresh lemon juice for garnish
Instructions

Place the grill basket along the side of the grill, and turn the heat up to high.

Place the potatoes into a large pot and cut them in half. Cover the potatoes with cold water, and sprinkle generously with salt. Bring to a rolling boil over high heat. Once the water has boiled, turn down the heat to medium high and continue cooking until it is just tender enough to eat with a fork, approximately 12-15 minutes. Overcook NOT. Drain and cool.

Slice the zucchini into sticks while the potatoes are cooking. Toss the zucchini in a bowl with 2 tablespoons of oil and some salt and pepper.

Toss the cauliflower in a large bowl with 2 teaspoons of oil, a pinch or salt and pepper.

Spray the grill with cooking spray, then place each zucchini stick on the grill. Cook the zucchini on one side, occasionally stirring the cauliflower. Flip the zucchini over and continue cooking until it is charred from the other side. It takes approximately 3 minutes on each side. It may be necessary to cook the cauliflower for a few minutes longer than the zucchini. Both vegetables should be brought to a boil.

After the potatoes are cooled, peel off the skin gently and cut them into sticks of 3/4 inch. Toss them with 2 teaspoons of oil and some salt in a large bowl.

Remove the seeds from each avocado by cutting it in half. Sprinkle salt and pepper on top of avocados and brush the tops with remaining oil.

Cook the sweet potatoes until they are charred (about 2 minutes) on one side. Repeat the process for about 2 more minutes, while checking to ensure that the avocado doesn't burn. Remove the avocado from the grill.

Rub the flatout with 1 tsp oil, then the lemon zest, and the garlic salt. Make sure you rub the spices in well. Place the Flatout on the grill and cook for one minute. Flip it over and cook another minute.

Add all the ingredients for the "dressing", excluding the fresh lemon juice, to a small food processor. Blend until creamy and smooth, scraping down the sides if necessary.

Divide the ingredients into 4 bowls and add the dressing. (About 2 Tbsp per bowl). Fresh lemon juice can be squeezed over each bowl. Season to taste with a little salt if necessary.

Divide the Flatout between the bowls.
